Currants and stone fruit lead on the nose, with a jammy richness and hints of black currant. The palate follows through with dark fruit and raisins, layered with Christmassy notes, warm spice, and a gentle sherry sweetness. Lighter and a little sharper in the mouth, it remains smooth and well balanced as the flavours carry into a long, subtle finish, fading evenly.

APERA WHISKY SOUR
On Kangaroo Island, the sea air and seasons shape more than the land, they shape our whisky. The Apera casks lend warmth and richness, layered with stone fruit and sweet spice. In this sour, it finds balance. A classic, from a different point of view.
Ingredients
- 50ml Kangaroo Island Spirits Apera Cask Single Malt
- 25ml Fresh lemon juice
- 5ml Kangaroo Island Honey syrup
- 15ml Egg white or aquafaba
- Dash Angostura bitters
Method
- Dry shake all ingredients (without ice) for texture.
- Add ice and shake again until chilled.
- Double strain into rocks glass over fresh ice.
- Garnish with dehydrated orange & native thyme.
